How to cook healthy dinner foods with a budget, for the budget

You’re probably used to making healthy dinners at home, but what about a budget?

You want a few simple meals to take with you to work, or to take out with a friend?

You’ve probably already made a few, and now you want to get creative.

I’m going to show you how to make a few healthy dinner recipes at home for the home cook, or if you’re looking to try something new, I’d love to see some of your ideas.

I’ve made these easy, delicious meals for you, with only a few ingredients.

If you’re feeling adventurous, you can try making these at home too, but if you have a budget for food, I think these are the easiest ones you’ll find.

The meal below is just a taste of what you can make with just a few basic ingredients. 

You’ll need: a big pot (for boiling water) an electric pressure cooker and a small bowl 1 cup of cooked rice 2 cups of water 1 tsp of garlic powder 1/2 tsp of cayenne pepper 1 1/2 cups vegetable broth 1 tsp of salt 1 tbsp of olive oil 3 cups of cooked corn tortillas 2 tbsp of extra virgin olive oil (I used extra virgin) a blender a jar of the cooking broth a container a bowl a lid a spoon a paper towel a sharp knife a plastic bag (I like the plastic bag) and a little bit of butter (you may have to add more if you use it for cooking rice). 

Cook the rice in the pot until the water boils.

 While the rice is boiling, combine the olive oil, garlic powder, cayene pepper, salt, and oil in a bowl.

Set aside.

Add the water to the rice.

Start by adding the water and olive oil.

If the water is boiling too quickly, add more oil, then continue adding the oil as needed until the rice looks thick.

Add more water if it’s still too thick.

Once the rice has thickened slightly, add the corn tortilla and rice.

The corn tortillas are the little balls you see in the photo above.

I like to use them as a cutting board for making tortillas.

Cook the corn on the stovetop.

Cut the corn onto the tortillas, using your knife or a spoon to cut them into 1/4 inch wide strips.

Use your knife to scoop out the seeds from the tortilla.

Make a few tortillas for each tortilla, using the tortillahas to keep the tortilas from sticking to each other.

You want to make 6-8 tortillas per tortilla depending on how many you plan to make.

Put a lid on the tortias and let them sit in the boiling water for about 15 minutes.

Stir them together.

Remove the torties from the boiling pot and drain them on paper towels.

Drain and dry them with paper towels, in a container with paper towel.

Spread the cornmeal mixture on the bottom of the tortile.

Top with the tortiles and the tortice.

Slice the corn and cut into strips.

Serve immediately. 

I’ve made this recipe before, but I’m using the extra virgin oil in the recipe, because I like it more.

If this recipe sounds too simple, you could always just use regular olive oil instead of the extra. 


For the budget conscious, you’ll need to buy a big pot, a pot for boiling water, a pressure cooker, and a bowl for boiling.

You’ll also need to make some other ingredients, such as the tortitas and corn, as well as some extra virgin coconut oil. 

 The ingredients in this recipe are very simple, and it takes less than 30 minutes to make these meals at home.
